Recipe of the Week: Grange Co-Op’s Pear Almond Tart

In this week’s episode of “On the Road with Noble Outfitters” we visited Grange Co-Op and here is their delicious Pear Almond Tart recipe they shared with us.

 

Toasted Almonds:

1/2 cup sliced almonds

1 tbs. butter

2 tbs. brown sugar

 

Preheat oven to 350. Take 1/2 cup sliced almonds and 1 tbs. butter and place on sheet pan. Bake for 8­-10 minutes or until lightly golden. Stir in 2 tbs. brown sugar and bake 2 more minutes. Set aside to cool.

 

Pie Crust:

1 1/2 cups flour

1 tsp. Almond extract

6 oz butter, softened

1/3 cup brown sugar

 

Prepare crust. By hand, mix the softened butter with the flour until crumbly. Add the sugar and the almond extract and continue mixing until dough comes together in a ball. Do not overmix. Chill dough for about 15 minutes and then press it into the bottom and up the sides of a 10” tart pan (with removable bottom). Bake for 25 minutes or until lightly golden. Set aside to cool.

 

Pie Filling:

8 ounces cream cheese, softened

1 egg

1/4 cup sugar

1 tsp vanilla

3­-4 medium sized Red D’ Anjou Pears

Blend first four ingredients until well combined and then spread the mixture over the baked (and cooled) crust. Then take the pears and cut them into quarters, remove core and then thinly slice the pears. Arrange the sliced pears over the cream cheese filling. Bake for about 20­-25 minutes, or until the cheese filling has “set”. Finally, sprinkle the toasted almonds over the tart and bake for 2-­3 more minutes.

  1. The recipe for Pear Almond Tart, calls for 34 pears. I assume it’s supposed to be 3 – 4 pears. Right? And, after sprinkling almonds over tart, it says “bake 23 more minutes.” Should that be 2 – 3 more minutes? Thanks. Can’t wait to try this!
