In this week’s episode of “On the Road with Noble Outfitters” we visited Millbrook Tack and here is their delicious Apple Beer Vinaigrette Greens recipe they shared with us.

Apple Beer Vinaigrette Greens By Wilda Terrile

 

1/4 cup apple beer

1/2 tsps. honey

1/2 tbsp. Dijon mustard

2 tbsp. balsamic vinegar

1/4 cup good extra virgin olive oil

1/4 tsp. thyme

1/8 tsp. salt & pepper

4 cups greens

3 oz. goat cheese

1/4 cup pecans

1/4 cup cherries

 

Reduce beer to 3 ounces, cool. Add honey, mustard, vinegar, thyme, whisk in oil.

Arrange greens, top with pecans, cherries, goat cheese and then dress.

2lbs boneless, skinless chicken thighs

Wooden skewers soaked in water

Shocktop honey crisp apple wheat beer 1 for marinade (3 to drink)

Blazin’ Blends New Orleans spice (or any New Orleans spice)

 

Soak skewers in water or beer. Cut chicken into even cooking pieces and put on skewers, not too tight, about 1/3 lb each. Put in pan to marinade, coat with seasoning and top with beer. Leave overnight up to 2 days. Then throw on a hot fire, cooking each side about 5 minutes. Thighs are hard to overcook, so pull them off and enjoy. You can make enough for a group a couple of days ahead. Serves about 4.
