In this week’s episode of “On the Road with Noble Outfitters” we visited Coolhorse in Amarillo, Texas, and here is the recipe they shared with us.
Coolhorse’s Santa Fe Soup
2 Red Bell peppers
2 lbs Ground beef
1 lbs Ground sausage
2 Large cans ranch style beans (with juice)
2 Regular can of corn (with juice)
2 Can Ro Tel
1 Large block Velveeta
Heat skillet on medium high heat with a stick of butter. Add chopped onion and chopped bell peppers. Once tender add ground beef and ground sausage till browned. Add canned ranch style beans, corn, and Ro Tel into skillet. Place cubed Velveeta into skillet and wait to cheese melts stirring frequently. Serve with corn bread.
