Recipe of the Week: Dennard’s Spicy BBQ Baby Back Ribs

In this week’s episode of “On the Road with Noble Outfitters” we visited Dennard’s Farm Supply and here is their delicious Spicy BBQ Baby Back Ribs recipe they shared with us.

Rib Rub:
1/2 C Paprika
1/3 C Onion Salt
1/2 C Brown Sugar
2 T Dry Mustard
1/4 C Chipotle Chili Powder
1/4 C Cumin
2 T Cracked Black Pepper
1/4 C Garlic Powder
Adobe BBQ Sauce:
1 T Oil
1 LG Yellow Onion – diced
5 Cloves Garlic – minced
1 C Ketchup
1 Can Tomato Paste
2 Adobe Chilies – chopped
1/2 C Strong Coffee
1/3 C Brown Sugar
1/4 C Cider Vinegar
Juice of 1 Lemon
Juice of 1 Orange
1 1/2 T Dijon Mustard
In a large skillet, heat oil over medium heat, add onion and garlic and saute until they begin to wilt. Add the remaining ingredients. Simmer for 30-40 minutes. Stirring often as it begins to thicken. Remove from heat and cool. Place sauce in blender and puree it. Refrigerate.
Mix all ingredients together and rub on both sides of the ribs. Wrap in plastic wrap and place in the refrigerator overnight. Bring to room temp before grilling. Preheat grill to med high heat. Place ribs on grill and lower the temp. (I put mesquite chips in my grill pan to add more smoke flavor) Leave for one hour at a low temp. Watch carefully – you want them browned not burned. Wrap in foil and place in a 230 degree oven for 2 hours. Unwrap and place them in a 13×16 pan. Brush with BBQ sauce and bake for 350 degree oven for 20 min to caramelize.
