In this week’s episode of “On the Road with Noble Outfitters” we visited IFA Country Stores and here is their delicious Ultimate Veggies recipe they shared with us.
2 lbs. whole baby red potatoes
2 lbs. whole baby Yukon gold potatoes 2 lbs. whole baby carrots
2 yellow onions cut in chunks
2 Cups small button mushrooms
1 Cup sour cream
1 can cream of mushroom soup (you can substitute any cream soup you prefer)
1 stick of butter (melted)
1 Cup water
4 Cups grated cheese (cheddar or mix of cheddar and jack cheese)
1 cup cooked bacon crumbled
-Pepper to taste
-All-purpose seasoning to taste (Seasoned Salt, Mrs. Dash or whatever seasoning you prefer)
Leave all veggies except the onions whole. Place potatoes in bottom of deep 12 inch Dutch oven, then carrots, onions and mushrooms. In a bowl, mix the sour cream, butter, and mushroom soup and water. Spread mixture on top of veggies in Dutch oven. Sprinkle pepper and seasoning evenly over top. Place lid on Dutch oven and cook in 350° oven for 40 minutes stirring occasionally to make sure it isn’t sticking on the bottom. After 40 minutes test a carrot for tenderness. Carrot will pierce easily with fork when done. Add a little more time if needed to make sure veggies are done. When all the veggies are tender turn off heat and top with cheese and bacon, replace lid for five minutes to melt cheese.
